LAKEWOOD, Ohio – National Detroit-Style Pizza Day is recognized every year on June 23. To celebrate, we chatted with Joe Schlott, the owner of Gray House Pizza, to find out what first attracted him to Detroit-style pizza, and why he is one of the very few shops in Northeast Ohio that serves it, let alone specializes in it.

Schlott fancies himself as a “student of pizza” and is quick to admit that when he travels – especially to New York City, where pizza is king – his “first stop is pizza.”

Tried, kinda of like Silcian, too thick of a crust, the best pizza is "Ohio Valley pizza", thin crust and must be ate after they put the cold provolone and pepperoni.

Get 4 square pieces in a pizza box folded in half with a rubber band. Eat in car.

I bought a wood-fired Ooni pizza oven a few months back and we’ve been having a lot of fun making pizza. I started with store-bought dough from Trader Joe’s and Safeway, but quickly progressed to homemade dough, then to using genuine “Tipo 00” flour I bought on Amazon, then to using a 24 to 36 hour ferment of the dough. Last night we had neighbors over for pizza and I made my first homemade pizza sauce with “DOP” plum tomatoes bought on Amazon.

The pizza comes out of the 900 degree oven with a perfect crust - light and puffy on the outside and nicely done on the bottom and perfect “leopard spots” on the crust. My wife whipped up a bunch of toppings and we had a great time trying different combinations. I’ve made some great white sauce and pesto sauce for our pizzas which were both great.

It’s a great social thing to do with friends. I wish I had started this years ago!

Nice. Now try different toppings.

Artichoke hearts, baby spinach, tomato, Rotel, banana peppers, etc.

Alfredo is a food white sauce.

Detroit style pizza is great if done correctly. First, you need the right pan. Second, you need the right dough. Third, you need the right cheese. Fourth, you need the right sauce.

The crispy corners or edges are so tasty. The crust is a combination of crispy yet chewy.

There is nothing better than having a pie and a cold beer with friends after a Tiger’s win in downtown Detroit. But what do I know, that was back in the 60’s. Great memories. Al Kaline, Mickey Lolitch, Willie Horton,... and the gang.

I would never have called a pizza place “Gray House Pizza”.
A pizza is colorful. The colors make an appetizing image.
But sometimes, a name is just a name and it does not matter.
For example, one of the clumsiest eatery names I’ve ever heard would be “Ruth’s Chris Steak House” and they have national reputation as serving good food. I’m thinking;
‘Two first names for a steak house?’ but maybe there is local history behind it.

I grew up in St. Clair Shores, MI, and had Green Lantern Pizza many times. I like my pie dark baked.

Everybody seems to have their favorites. New York style, Detroit style, Chicago style, and others I can’t think of offhand, all have their fans.
