Not a connoisseur, just an American living in Japan and exposed to a variety of seaweed foods.Β I've heard, by the way, that seaweed is the coagulant used in ice cream.
One favorite is something called mozuku, a refreshing treat often served raw in a small bowl to accompany a dinner.Β We have it at home dressed with sweet vinegar or soy sauce. And because it's slimy, it's best eaten with wooden chopsticks.
Check your Asian grocer to see if they carry it. Many health benefits are claimed for the food.Β Good recent magazine story here:
