While meat lovers look forward to a Memorial Day barbecue, many people might be looking for a vegetarian option.
With their high protein content, black beans lend meaty substance to veggie burgers. Too often, though, the patties turn to mush. So for this recipe from our book “Cook What You Have,” which draws on pantry staples to assemble easy, weeknight meals, we went looking for ways to improve their texture. The answer was three-fold.
First, we only mash the beans coarsely so that when combined with other ingredients, we’re not left with a smooth paste. Second, we incorporate a significant amount of quinoa — two-thirds of a cup to one 15½-ounce can of beans — to vary texture with little pops of the nutty, high-protein grain (though technically it’s a seed). And finally, we pan-fry the patties until browned and crisp.
To ensure they don’t fall apart, we don’t rinse the beans; the starchy liquid clinging to them helps bind the mixture. We also add egg and panko breadcrumbs, and chilling the formed patties in the refrigerator for 15 minutes firmed them up for easier flipping in the hot skillet.
Flavored with scallions, cumin and paprika, these vegetarian burgers are terrific sandwiched between buns with your favorite fixings. But they’re also satisfying on their own with a tossed green salad. …

My hamburger is a sirloin steak ground into chop meat. If I want vegetables I will make one.
They will never convince me that fake meat and vegetable meat are good.
I use sirloin as well when I make burgers. I chop it myself using a food processor… 30 and only 30 pulses so it doesn’t build up myosin. Makes for very tasty and tender burgers.

Actually it is a fruit sauce.
I made a fruit salad with flower bulbs. Tomatoes, (berry), Cucumbers (melon) Avocado (oily fruit), Onion, (flower bulb) Garlic (flower bulb), Peppers (berry) and lime (citrus) and sprinkled it with rocks (salt).
It was pretty good but only about half of the people at the table got the joke.
Why try to re-invent the wheel?
Memorial Day and Independence Day are good for Big Kahuna Burgers. Based on a fictional burger chain in Quentin Tarantino movies, somebody took the time and effort to create a superior recipe of a Big Kahuna burger.
While different from other burgers, it is surprisingly good.
Big Kahuna Burger
2 lbs hamburger (80/20 is best)
4 tbs Hawaiian style (w/pineapple) sweet teriyaki marinade
6 pineapple slices, grilled
6 slices of provolone
1 pkg large King’s Hawaiian buns
Optional:
lettuce, purple onion, tomato, sliced jalapeno, peperoncini or banana pepper.
Big Kahuna Secret Sauce
equal parts ketchup and brown sugar plus 1 Tbsp Dijon mustard. Sounds improbable but works great.
Simmer all ingredients until sugar is melted and fully blended.
Marinate hamburger in teriyaki sauce for at least 20min before cooking.
BBQ grill both burgers and pineapple slices then melt cheese over burger before serving.
Big Kahuna burgers go well with beer, soft drinks, and even Mai Tais.

We’re grilling beef short ribs in a mesquite marinade with potato salad and baked beans. And beer! 😏
Sounds good,but they left the ground beef out of the recipe.
Personally I would use a spicy ground sausage.
