I do not use shredded carrots, but grated.
The grated raw carrot has the consistency of applesauce whereas the shredded is tiny slivers of carrot.
I have tried it both ways and find the grating is superior to the shredding.

I love carrot cake, as does my family - I used to make it from scratch, grating the carrots, etc.
My aunt uses carrots from baby food jars to save time. My family’s recipe also includes and inch of buttercream frosting - way way too much.
My friend makes carrot cake with a glaze instead of the frosting and I’ve found that to be far more palatable.
