Everyone seems very brittle these days.
I bought some at a roadside market place in L.A. coming home from FL a week ago. (L.A. would be Lower Alabama). It was quite good, but I think what’s left is at the other house. Now I’m hungry for brittle and won’t be able to get at it until tomorrow.
I’m partial to Sees Candy Store Peanut Brittle myself.
Hard pass. This stuff has never appealed to me.

There is a huge variety available. This place also has great chocolate toffee.
I drive by this store and restaurant about every eight weeks in souther Virginia.
They also have a great selection of almonds etcetera.

I like peanut brittle, but I don’t eat it very often. Nowadays, it’s mostly made with high fructose corn syrup, which I try to avoid.

I love good peanut brittle. Unfortunately, it is hard to know if it is good until after you eat it. The good stuff has a buttery undertone to it.
I like to make my own peanut brittle every now and then. Lately I have been making a very similar thing using mixed nuts and pure cane syrup. I just love cane syrup so much better than corn syrup.

1 cup Roasted & Salted Peanuts
▢2 ounces Butter
▢3 ounces Swerve
▢1 teaspoon Vanilla Essence

Instructions
Line a cookie sheet with parchment paper and evenly spread out the peanuts.
Place the butter, swerve and vanilla essence in a small saucepan over medium-high heat.
Cook the mixture to caramel stage, it should be a deep brown color. Note that under cooking the caramel will leave your brittle grainy.
Pour the caramel over the peanuts and leave to cool completely, around 30-50 minutes.
Break the cooled brittle into pieces and serve.
