NATIONAL PIE DAY

Each year on December 1st, dessert lovers across the United States enjoy a slice of their favorite on National Pie Day. Pie is so delicious we celebrate it twice a year. The more popular date is January 23rd.

While it might be the lesser of the two celebrated PIE days (don’t forget National Pi Day on March 14th), it happens to fall smack dab in the middle of a major pie-making season.

Take away ice cream as a dessert choice, and most people are either cake people or pie people. Or, to put it another way, most people have cake or pie with their ice cream! The day combines our bumper fruit crops with a booming holiday season full of baked goods, cool weather, and rosy-cheeked children. It’s definitely time to tie on those apron strings and get baking.

Of course, we make more than fruit pies! Savory pot pies provide comfort on a cold winter’s day and the satisfaction a family cook needs when caring for a family.

I satisfy my memories of my grandmother's lard pie crusts by consuming the occasional small bag of lard-cooked potato chips. We have Grandma Utz's brand in this region:

Rhubarb comes to stores only for a week or two in early spring here in central Maryland. Sometimes you can find a farm stand that has it and is open that early in the season. It's possible to use frozen, but it won't taste quite the same.

BEFORE COOKING RHUBARB:
* Remove all traces of the green leaves at the tops of the stalks (the leaves can be toxic).
* Wash or pare away any dirt from the rhubarb stalks. Discard parts that are woody or have not turned red.

STEWED RHUBARB:
* To serve 4, you'll need about 7 to 10 long stalks (as long or longer than average celery stalks).
* Chop rhubarb stalks crosswise into 1-and-1/2-inch chunks to yield 5 - 6 cups and toss in a deep saucepan with about 2-teaspoons of sugar per stalk. Let sit and marinate for an hour or more.
* When ready to cook, add about a cup of water.
* Raise to a boil, stir gently and lower immediately to a simmer.
* Simmer, stirring occasionally until the chunks are falling apart and most of the flesh is thickened, but with visible strings, about 10 to 15 mins.
*Remove from heat. Add more sugar to taste if necessary.
*You can also toss in some halved strawberries while cooking for color and sweetness, adjusting sugar to taste.
* Some people add a dash of cinnamon. Not me.

My grandmom used to make it by cutting the stalks just enough to fit crosswise in a large pot, and tossing the sugar in with the simmer water. The result was long strings in the stewed rhubarb that was like trying to eat spaghetti strands, only slimier! She got a laugh from the kids having fun slurping it! My dad always liked a slice of bread and butter with it to catch up the strands. Stewed rhubarb keeps up to 2 days and freezes well.

RHUBARB PIE
* Prepare a 9-inch single piecrust and line the pie pan with it.
* PREHEAT oven to 450F.
* Clean and chop rhubarb into 3/4-inch chunks to yield 4 cups.
* In large bowl, combine 1-and-1/2 cups sugar and a rounded 1/3 cups flour (OR dry tapioca or crushed vanilla cookie crumbs).
* Add rhubarb (and some strawberries, if you like) into the dry ingredients and toss very lightly to coat the chunks.
* Arrange coated chunks into the prepared single pie crust; dust over with all of any dry mixture left in the bowl. Dot with butter pats.
* Bake 10 mins and REDUCE TEMP to 325F.
* Bake until bubbly and fragrant and a toothpick inserted in center comes out clean, about 40 to 50 mins or so.
* Let cool slightly before slicing; or, okay to eat cold. Fanastic served warm with vanilla ice cream.
* Some people like a top crust. Not me.

Lunch bucket Joe continues Democrats pretentiousness.....lobster AND prime beef.

This is Trump’s menu for Macron.

To start, savory goat cheese gateau, tomato jam, biscuit crumbles and young variegated lettuces.
The main course is rack of spring lamb , burnt cipollini soubise, and gold rice jambalaya.
Rounding out the menu is a nectarine tart with crème fraîche ice cream for dessert.

How about sour cream apple pie? Remembering that from childhood days. I don’t think it was very available except as homemade. There were othewr sour cream pies as well, all equally delicious.

My dad was also known for his apple pie! His secret was mounded high thinly sliced Granny Smith apples and along with the necessary cinnamon, lemon juice and flour, he added a splash of brandy or Courvoisier Cognac. Everyone loved them.

I had always used butter for pie crusts and ice water, as well, but this past year I tried a new recipe that still uses butter but instead of the water, you use sour cream. What a big difference! So flaky and delicious.

I don’t doubt they eat high on the hog at every meal! Didn’t they just get a half million $ wall built around their beach mansion comps from you and I? They will never learn you can’t buy class.
