Believed to have originated in the New England States during the early 1900s, cranberry relish is a traditional part of many families Thanksgiving dinner.
Each Thanksgiving, Susan Stamberg provides National Public Radio listeners with her mother-in-law’s recipe for cranberry relish sauce. The American radio journalist and Special Correspondent for NPR and guest host for Weekend Edition Saturday has been doing this since 1971. What’s unusual about the special recipe, known as Mama Stamberg’s Cranberry Relish, is that horseradish is one of its principal ingredients. Craig Claiborne originally published the recipe in his food column in 1959.
Numerous cranberry relish recipes grace cookbooks and blogs across the internet. The bright and sweet flavors are enhanced by ingredients like apples, oranges, and pineapple. You can make them spicy or nutty, too. Or, you might offer more than one style and use the leftovers for great sandwiches. But there’s more than one way to slice this cranberry dish.
Use it as a marinade for pork, chicken, or beef.
Add it to barbeque sauce and pour it over meatballs.
Mix it into a batch of muffins for breakfast.
Stir it into cream cheese and add it to your morning bagel.

Cranberry Relish FAQ
Q. Can I make cranberry relish ahead of time?
A. Yes. Stored in a covered container it will keep up to two weeks refrigerated. You can also freeze cranberry relish which should keep for up to three months.
Q. Does cranberry relish have pickles in it?
A. No. Cranberry relish is not the same as pickle relish and contains no vinegar or pickles.

Guy Bluford – 1942
On August 30, 1983, the NASA astronaut became the first African American in space. Along with Commander Richard H. Truly, Pilot Daniel C. Brandenstein, Bluford joined two other mission specialists, Dale A. Gardner and William E. Thornton aboard the space shuttle Challenger. They launched from the Kennedy Space Center in Florida in the first night launch for Challenger. When they touched down six days later at Edwards Air Force Base in California, it was the first night landing for Challenger.

The Recipe's Origins:
As Susan Stamberg has noted, her mother-in-law got the recipe from a 1959 New York Times clipping of Craig Claiborne's recipe for cranberry relish. In 1993, Claiborne told Stamberg: "Susan, I am simply delighted. We have gotten more mileage, you and I, out of that recipe than almost anything I've printed."
This relish has a tangy taste that cuts through and perks up the turkey and gravy. It's also good on next-day turkey sandwiches and with roast beef.
Makes 1 1/2 pints
Ingredients:
2 cups whole raw cranberries, washed
1 small onion
3/4 cup sour cream
1/2 cup sugar
2 tablespoons horseradish from a jar ("red is a bit milder than white")
Instructions:
Grind the raw berries and onion together. ("I use an old-fashioned meat grinder," Stamberg says. "I'm sure there's a setting on the food processor that will give you a chunky grind, not a puree.")
Add everything else and mix.
Put in a plastic container and freeze.
Early Thanksgiving morning, move it from freezer to refrigerator compartment to thaw. ("It should still have some little icy slivers left.")
The relish will be thick, creamy and shocking pink. ("OK, Pepto-Bismol pink.")

Fresh Cranberry Salsa
Ingredients:
12 oz bag fresh cranberries, washed
2 jalapenos, minced (adjust according to taste)
1/4 cup sliced green onions, roughly chopped
1/4 cup packed cilantro leaves
1/2 tablespoon lime juice
1/2 teaspoon kosher salt
1/2 cup sugar
2 (8oz) packages cream cheese, at room temperature
Instructions:
Place cranberries, jalapenos, green onions and cilantro in a food processor and process until fine. Transfer mixture to a bowl and stir in lime juice, salt, and sugar. Chill in fridge for about 2 hours or more.
SERVING SUGGESTION spread cream cheese evenly in a pie plate or other shallow serving dish. Spread salsa on top and serve with crackers.

My relish recipe comes from Zenders in Frankenmuth, MI. Two bags of cranberries, two large apples and a naval orange. Food process in order-orange, apples and then cranberries. Mix all together and add sugar to taste. I used artificial sweetener once but it did not taste right. For some reason, the cranberries are huge this year.
Question:
Peel the oranges and apples?
Reason is a former co-worker of mine was from England and she ate the oranges with the peels........................
You chop all the orange. The apple is cored. Cranberries are chopped frozen. I am fixing a bowl just to eat at home. Going out for dinner.
