I just decided what I am having for dinner. I made shrimp and sausage gumbo several weeks ago and have leftovers in the freezer. That’s two days in a row the calendar worked for me. Sausage pizza was great last night.

You’re right. You can’t freeze Yorkshire pudding. I usually don’t make that without roast beef. I’m not buying and making roast beef just for myself, plus it’s too expensive.

I make a quite good mushroom gumbo.
I've got all the ingredients - been planning it for over a week.
Little did I know that today would be National Gumbo Day!

I wish I still lived within driving distance of
this place. Around twenty years ago, they had a second location just a mile or two away - got really hooked on the duck & andouille gumbo.
One of my favorites to make at home, though, is with leftover turkey after Thanksgiving. And I don't make the roux quite as dark as the one at the link.

Son of a gun, gonna have big fun! :)
Once Upon a Time, Chef Paul Prudholm (sp?) had a Louisiana restaurant in Madison, WI. It. Was. Fabulous. Dad took us there on any occasion he could think up. The Chart House.

Man I am 1100 miles away and reading that recipe and looking at the menu makes me want to get in the car.

BTW, the link to the online sales source is bad - but if you go to that site’s home page and search manually, it’s in there. With colder weather arriving, I might just try it.

I doubt that it ships to rural coastal North Carolina without thawing out. I actually want to try to prepare some variations myself.

"Gumbo arose from a West African word for okra." The term gumbo, not the dish itself.
