there are a fair number people who work night shifts. They do not change their schedule on their days off. So it is natural for them want to shop at 3:00AM.

For a long time, I took care of my kids during the day and worked late nights. I shopped for groceries in the wee hours of the morning after my shift ended. But, even when I wasn't working, I preferred to avoid the crowds by shopping late at night.

I was a night auditor for a hotel as an undergraduate. I did the 10:30-6:30 shift for years. On my days off, I stayed up all night. Shopping when you don’t have to stand in line is nice.

I grew up near Flint MI and when GM was booming everything was 24/7. My great uncle was a salesman at East side Buick on night shift and made tons of money.
