For those of us on a keto diet, I have found a wonderful thing for breakfast: EggLoaf. The recipe is: 8 large, room-temperature eggs, 8oz. cream cheese, 4 oz melted butter, 1 tsp. vanilla, 1 tsp. baking powder, and 3/4 cup almond flour. Mix everything together until smooth. Line a loaf pan with greased baker’s parchment and pour in the batter. Bake in a 375 degree F. oven for half and hour to 45 minutes, until an inserted knife returns clean. Cool on baking rack for 15 minutes before removing from pan.
Serve hot. Can be sauteéd in butter and garnished with fruit (not keto), cinnamon and stevia, or, a no-carb syrup (which I have no idea there is!).
