Tanuj Deora works in the energy industry - specifically to decarbonize energy systems. That's the technical term for efforts to reduce the reliance on fossil fuels. It's a vast and complex problem, but Deora and his family try to do their part. At their home in Northwest Washington, they have solar panels, LED lightbulbs and a hybrid minivan. In the kitchen, though, the issue of fossil fuel usage was more personal. Their natural gas cooktop was making Deora sick.
"I would get a headache whenever the gas was running," he says, so he started looking into replacing their gas stove.
But first, he had to sell his wife, Amy, on the idea. The two of them love to cook and make meals from scratch most nights. Amy believed that gas cooking was superior in performance. When they remodeled their kitchen in 2021, though, she agreed to try an induction stove. Five months later, they have no regrets. "This cooktop isn't just adequate for cooking - it's better than the gas stove was," Deora says.

This seems to be the latest green craze: banning gas in kitchens. Completely ridiculous since cooking uses very little gas and 100% of the energy is usable heat. (Power generation is only 50% efficient and then there are transmission losses and the induction circuitry wastes some).
Microwaves are said by these folks to be efficient too but they aren’t. My 1000 watt unit actually draws 1700 watts so 42% is wasted.
People who actually like to cook will just install propane in these jurisdictions but it’s less “green” than natural gas.
I’m old enough to remember those wood burners
used in the country by my grand parents, etc.
Had to cut wood, split and stack it.
It's harder for the Fascists to control.
If everything is electric and they monitor your consumption, they control you.
They control the source of the electricity, like their highly unreliable and expensive "renewables".
I used propane for years in a rural place, no complaints.

There is no professional kitchen I have seen that does not use gas.
My wife and I like to cook and have had gas for 30+ years. It's a closer call as to ovens. Electric works pretty well for an oven although I use my gas oven most.
If they pull this trigger that will deliver a punch in the gut to the restaurant industry which has been taking body blows for two years as the libs and public health authorities with no evidence at all blame them for COVID.
Our new house in Sun City, Georgetown TX will have gas all around except for the dryer.

That’s because you have to LIGHT THE FLAME, when running the gas.

Or have back up Propane or Butane. Amazing how many people don’t have either.
Well, that’s interesting. When I recently moved to Florida, I stayed in a couple AirBNBs before buying my current home. The AirBNB’s had gas stoves, and in my opinion, they heated things a little faster than the electric stove in my current home.
When I get done with the various repair and hurricane prep items I need to do with this house, I will have to see if I can get a gas stove hooked up, if they’re still available.
As far as I know, I don’t see why not. You would just need that match for the gas rings, because the strikers wouldn’t work.

Plenty of appliance reviewers have compared gas to induction by measuring the time it takes each to boil the same amount of water. Induction wins every time. That doesn't prove it's better, just that it provides plenty of heat.
1W=3.41 BTU/hr. So a 3,700w induction burner is equivalent to a 12,700 BTU/hr burner. Sure, you can buy a range with a 15,000 or even 18,000 BTU/hr burner. But where is that heat energy going? Gas burners are about 50% efficient, while induction is about 90% efficient. So that 3,700W induction burner can heat water about as fast as a 22K BTU/hr gas burner.
All it takes is money.
This is the wood stove we have.
That front lower flat spot is 16" deep x 20" wide so my 12" cast iron skillet fits nicely and there's no hot spot in the center. I do spin it 180 degrees when using it because the back tends to be a little warmer. Most evenly cooked bacon ever. I wish they made a 12 inch square skillet. Never really used the upper surface for cooking and don't like elbows in stove pipe so I cut a hole in the top, back for the stove pipe and welded plate over the original stove pipe hole on the back. Didn't affect performance at all and the pipe is straight up to the outdoors. Very little creosote buildup and easy to clean what little there is.
Maybe with this kind of story the price will drop.
Oh, and if the gas "makes your head hurt"?
You have a leak or you are neurotic.

Yep was a time when corn cobs had other uses to.
I find electric stoves to have two temperatures - too hot and too cold.
Even going from a conventional coil stove top to a smooth stove top requires new pots and pans.
prices aint coming down till we give Joe the heave ho..
