I love aioli and made some from scratch for first time a few months ago. It came out silky smooth but I did not like the taste of olive oil in it as the fat though, any ideas?
any fat will do. bacon?
I do a mix of MCT oil and avocado oil. The result has no off flavors and is about as healthy as you can get (for mayo) in terms of Omega 3-6-9 balance. I don’t care for the olive oil either.
I make my mayo with neutral-tasting vegetable oil. As little flavor as possible so I can add whatever other flavors I want at that moment. Olive oil didn’t work for me taste-wise, and neither did coconut oil (hardened when I refrigerated the mayo, so I had solid mayo!).

Use a neutral flavored oil like canola.

Use neutral oil. Olive oil does not make good mayo. Btw, from scratch mayo can be made in 2 minutes. I do it all the time.
