Amid shortage, Canada taps into emergency maple syrup reserves

Global supply shortages have hit toy shops in the US and coffee producers in Brazil. In Canada, the country's liquid gold - maple syrup - is running low.

The Quebec Maple Syrup Producers (QMSP) - the so-called Opec of maple syrup - has released about 22m kg from its emergency larder, nearly half the total in reserve.

Booming demand and a shortened harvest had caused the shortfall, QMSP said.

It is the first time in three years the reserve has been used.

"That's why the reserve is made, to never miss maple syrup. And we won't miss maple syrup!" Helene Normandin of QMSP told US public radio.

Quebec produces almost three-quarters of the world's maple syrup.

Nope maple syrup is a big, big deal.

They have a big syrup monopoly system up there that taxes the crap out of producers.

There was a huge deal about people stealing thousands of gallons out of storage warehouses, it was millions of dollars of syrup. They did a bdeaking bad heist like when they stole their precursor from the train car. They would take a barrel from the warehouse, putthe syrup in their own tanks and bottling lines, and refill the barrels with water and hide away again in the warehouse.

A security checker eventually found one with water in it.

You can make maple syrup from any species of maple...silver maple, red maple, even box elder. What makes the sugar maple special is that it has, relative to the others, a higher concentration of sugar in its sap. You have to tap more silver maple sap to make the same quality and amount of syrup and of course, use more energy to boil it down to the same level of sweetness.

Too bad these Canadians don’t also have a strategic bacon reserve.

That along with the strategic pancake reserve and you’ve got yourself a great breakfast.

Hence the phrase *GOOD FOR* making syrup.

I know I certainly wouldn’t want to use the acer macrophylum in my back yard’s sap. Collecting the pitiful flow would be a serious waste of time and effort. And the tree is 70+ feet tall with a 3+ foot bole at 5 feet above the ground.

Volume of raw sap is a major consideration, right after sugar levels. There is also a hint of bitterness in the fresh sap.

Pure Maple syrup is always costly compared to ersatz “breakfast syrup,” which is mostly if not all flavored corn syrup.
