May not be the healthiest but I only like the barest minimum mozarrella fully melted on my pizza...or melted jack/cheddar on baked potato skins (with LOTS of bacon and chives!) :)
Otherwise not a cheese fan at all.

Americans do not know cheeze.
I go to Mexico frequently and the supermarkets have cheese sections that are more extravagant than meat departments in the USA. And everyday cheese like Manchego, Asiago, Panela and Menonita blow the best cheese you can get here out of the water, much less THEIR top shelf stuff.
I always bring cheese back with me from Mexico.
