In my case it is my daughter in law discussing a unique” topic during lunch and when she went into an app on her smart phone she started seeing ads related to that topic, though she had never used the internet or her phone at all regarding the subject.
I’ve had the same thing happen to me more than once. I was talking with a plumber one time about a clog in the outside line from the house, about a certain part (a cleanout), and moments later ads for that part (and others) showed up on my FB feed. I had never searched for that, but had the phone in my pocket while I was talking with the plumber. Only one of several times this has happened.

A topic we hadn’t discussed before , nor had done any searches or visited any websites.

Not a coincidence
My daughter and I were having a picnic lunch by the river. She said that her toaster was burning stuff and had to look for a new toaster.
That evening her FB feed was littered with toaster ads. No, she had not done any research yet. After another similar instance, I fully believe they are listening.
I would never have believed that but it’s happened to me twice. Exactly as you stated.
That was when there was a gift of a Google Home device. I insisted it be unplugged and it has been ever since. That is the last time that happened in my case.
A couple of years ago, my wife and I were driving into town to do some shopping. Her phone was turned on but not being used for anything. I happened to mention that Adirondack chairs were more comfortable than they looked, apropos of nothing, as I hadn’t mentioned them in many years, or even thought of them as far as I remember. We immediately started getting ads for Adirondack chairs from Wayfair and others.
Don’t try to tell me they’re not listening.
