There is no meat shortage. Can’t even get dates to butcher animals. Need to get rid of some bulls. Packing company is paying 65 cents a pound. There is a over abundance of meat.

Lot of it is knowing the place that the local cattle producer uses and butcher and having been in his store the week when all his commerical clients stopped orders and dropping 300 bucks to keep his lights on. First the cost is lower because there is not a 18 wheeler involved.

Just telling someone midwest you will be to support them because you want to buy from them on the other side of something less than SHTF event is valued. The term use to be good customer. I gave him a call and offered to pay what my wifes then closed employer pays for Fresh, Bone In Ribeye, Porterhouse and NY Strips and I would fill my freezer before he started making ground beef. We threw outdoor BBQs all summer long with the germ unit on the deck based on steaks we bought from our neighbor butcher. He paid an electric bill with my cash for meat that would have been made into Ground beef. We have probably spent another grand there over the rest of covid, taking the best cuts at a discount when he called me.

My butcher has a list of about 50 people who stop by and support him when he needs help getting rid of the 4-12 animals someone else must sell to pay fuel bills and tractor parts. There is a pile of college fund beef post county and state fair in Aug and September. Paying $7-12/lb I have no problems with, knowing it is keeping my neighbors employed, the community college open and the truck dealer in business. Now I dont spend alot on China Pork or Mexico Chicken because I buy and split for the two of us about 2 times a month from stock slaughtered the day I buy it.

Instead of making frozen hamburger patties there is a ton of beef out their to be had in choice cuts if you are willing to talk to your local butcher, wait, and take a mass off his hands when he has to make a deposit.

On pork, if your not buying whole Tenderloins and making chops out of them yourself that is the easiest thing to do and putting them in your family portion is what the industry calles custom packing. Pork Ribs go on and off pre covid price at least twice a week even at Kroger.

Bacon buy in bulk and learn to cut and throw it in the freezer. Add Fresh Side to the breakfast and meat candy inventory.

As I write this, these are the skills that every housewife use to know. That every butcher cut cost dollars and a factor of freshness. That the less cosmetic pieces are the family feeders and a roast can be as tasty as a Steak. This is what church taught the homemakers by chatting with the new “city girl”. This is why you were told to party with a city girl and marry a farm girl.

And certainly you dont have to over hunt property or skip a food group when meat is out there to be had just by being nice and shopping local. The farmstand operators will clue you in if you ask.

A guy who bought meat from them told me they had some stainless counters, a couple of meat saws, freezers and a floor drain.

After the wife went to prison the adjoining neighbor bought the property to expand his pasture and bulldozed the house into the basement.

My father told me when he was working in Austin, TX back in the mid 50’s a favorite lunch spot was hole in the wall that served a huge porterhouse and salad for $1.50.

Yesterday my local Shop Rites beef counter was busting at the seams with strip steaks, T bones, Sirloins, porterhouse and chopped meat of all kinds.
