Ghost peppers, Carolina reapers and habaneros are wonderful. A great way to spice up the usually tame Thai green curry with chicken. That still gets some Thai bird chiles and jalapenos for the low heat versions.

Try a peri peri pepper.
I can’t handle heat at that level.
I am so old that remember when jalapenos were considered hot and guys dared each other to eat them. Now they’re described as mild.

While habaneros are fairly hot, I find them bitter.

Bulgarian, or Hungarian hot wax are much better flavours, but sometimes need a kick to get them going
