The researcher thought it might be a function of chlorophyll, but, strangely, it’s due to what the spinach appears to help make occur in the gut with various simple fats. Strange outcome from an item that has virtually no fat on its own. However, gut bacteria can create these simple fats from various fibers, which we then absorb.

But....I’m thinking they tell kidney patients to NOT eat spinach because something in it helps cause kidney stones?
Not anti-spinach (got some in my fridge right now!). But seems like even healthy things can be unhealthy to the right (wrong?) people.
