I’n off sugar now and this is one of the fall meals I am going to miss.
So try it without sugar, really good.
I peel and cut butternut squash into cubes, coat with olive oil, pepper and garlic, roast at 400 for about 40 mins. Even my 2 yr old granddaughter loves it.
Our timing was off the other way- we had acorn squash last night.Cut it in half, scoop out the seeds, fill the cavities up with brown sugar and butter and bake until tender. It’s almost a dessert, yumm!
No sugar? No worries.
Try a pat of butter, a quarter cup of water, a sprinkle of clove, cinnamon and nutmeg.
Works for me.

Aw, man, a pan of butter-sauteed squash acorns would be a nice dinner. A little sea salt, cracked pepper, even some cinnamon and sugar would hit the spot. A thinking man’s popcorn on movie night.
Split in half, scrape out the seeds, in the centers put butter and brown sugar and a Pork Sausage Patty: bake at 400 for 1:15.
I use granulated Brown Sugar Twin around for Sloppy Joes, or whatever. Zero carbs.
If you like Butternut squash, and have the land, then it is a good crop for cool climates. Usually you can just plant and let them grow, very little needs to be done aside from occasional watering and directing some vines. Pick it late, even after a very mild frost, cutting it above the stem, and store it a cool, dry space like a back unheated hall. I have had them last 6 months (Oct. - June) and still be good, praise God. Peel, cut off the very top and at the neck, scoop out the seeds, quarter and boil and mash (if preferred) like potatoes, adding a little brown sugar is desired. Yummy and nutritious, thank God.
