I know of a dealership specifically that had a customer come in and and test-drove a 2021 Camaro GT 5.0L with Performance package at 160 mph. Will the computers on the car register that it went that fast at that time?

2021 Camaro GT 5.0L No such animal.
The following are the engine options:
Gas 2.0L Inline 4 Turbocharged
Gas 3.6L V6
Gas 6.2L V8
Gas 6.2L V8 Supercharged
Furthermore, there is no GT model at all.

Now there is a Ford Mustang GT 5.0. Perhaps you meant that car?

There’s no such thing as a 2021 Camaro GT 5.0L. Or a Camaro GT. There was a 5 liter engine (305) in a Camaro in the 80s…and of course the 302 Camaro in the 70s.
If you’re gonna make stuff up, do your research.

I once drove my Mercedes at 135 and while there was still a little more speed left in the car, the driver didn't have any more nerve and I quickly backed it down to 85 which seemed like I was parked.
If you are not trained for high speed driving {I wasn't} it is exciting but frightening and dangerous.
I was much younger and even more stupid than I am now, but that was really insane.
