
Smashed Potatoes
With a sturdy tumbler, smash on sheetpan potatoes boiled in their skins, sizzle with olive oil, s/p, bake till crispy.
Serve topped with shredded Cheddar sour cream, bacon bits.

I second that Smashed Taters are awesome! Easier to make than potato skins, for sure.
I nuke Red Potatoes, smash them on a cookie sheet, drizzle with EVOO, add S&P and crumbled Blue Cheese. Warm through in the oven as directed.
My back hurts just KNOWING how many potatoes I still have in the ground to dig! I think I’ll just have Beau do it with the backhoe like he did last year when he was being lazy. But, it worked! :)
