This week, along with our usual garden reports and problems solutions, let’s share recipes or ideas for eating Straight From The Garden. My garden is starting to explode, but I don’t have quite enough to start canning things quite yet. Still, I want to enjoy what I have on hand, as this season is fleeting!
Benedictine Spread
1 8oz block of cream cheese, softened
1 average cucumber, pealed, halved, seeds removed, roughly chopped
1/3 cup fresh dill
2 scallions, coarsely chopped
2 Tbsp. lemon juice
2 Tbsp. Mayonnaise
S & P to taste
Platter of cut up fresh veggies from the garden for dipping: carrots, bell peppers, radishes, celery, zucchini, pea pods, cherry tomatoes, green beans and hearty crackers or crostini.
Process cream cheese, cucumber, dill, scallions, lemon juice and mayo in a food processor until combined and creamy. Season with S&P. Plate and garnish with more dill or chives on top. Serve with the veggies and crackers.
Recipe sounds good - Benedictine? His feast day is tomorrow, St. Benedict.

Looks SO good (low carb, too - especially if you peel the cukes)! I shared this recipe with some family members who are being overrun with cukes, peppers & the like.
My bell peppers are producing foliage & not much else. The jalapenos have plenty of peppers (popper recipe will be do-able soon!). I picked another 8 cukes last night, gave away 19 (all picked in one day) Friday a week ago ... local fire station took them. :-)
Zinnias blooming en masse now so there is color in the garden. Marigolds are heavy on foliage, low on blooms, but there are buds. Morning Glories took off this week and are climbing like crazy so I hope flowers will follow soon.
Anyone with dahlia growing experience? A relative has the most gorgeous dahlia flowers that she puts in arrangements and I would like to grow some .... didn’t happen this year (first year with 4 galvanized beds just for flowers), but I think I have room for a bush or two in the new beds.

It may be too early for corn, but Ina Garten’s Fresh Corn Salad is just fabulous, IMO. I had an uncle who was over for dinner when I served it - first time he’d had it & I was worried he was going to dive head-first into the bowl (only slightly joking here). If corn is not in season, you can use frozen, cook & cool it.

We were getting a lot of snow peas, a surprising amount ... they went into an Asian dish called “egg roll in a bowl” with meat, cabbage, onion, shredded carrots, ginger, sesame oil, vinegar, soy sauce etc. Served with rice.
The snow peas are done now. It got super hot, which didn’t help. We’ve gone from heat stroke to hypothermia in a matter of days. Another week of rain forecast.
