I don’t really “get” the constant drumbeat of complaints about In-N-Out french fries. They peel potatoes, push ‘em through a slicer and then fry them in sunflower oil. Add some salt. That’s it. Those are real french fries. Period. There’s nothing to “fix.” If you don’t like them, then the problem is that you don’t like real french fries. If whatever frozen, sugar-coated, chemically-enhanced potato byproduct served at McDonald’s, Burger King and their ilk is more to your liking, then eat that instead.

Oh no there are many things to fix with fries. For one thing there are many different types of potatoes each with their own flavor. Peel vs don’t (I generally prefer don’t). And different oils.

If you don’t think there is any more nuance to making good french fries than that, then you aren’t really qualified to comment on the matter.
The few times I’ve tried In & Out, the fries were not cooked through. Once might be a lunch rush issue, three times is not.

My husband and I like In-and-Out when we are in San Jose. Burgers, Fries and a Shake— a nap and a long walk!!
Thank you and thank you again. I like In-and-Out and realize exactly what it is, basic french fries done the way french fries should be.
Maybe these people complaining should dip them in mayonnaise, the same way their spiritual peers do.
