Completely not even what I would consider a food item, those crappy fake tortillas in a bag.
Make your own. Stretch and roll.
I put a bag of those store bought and a bag of the “cheese” in a bag, pregrated, that my sister uses, in my man zone fridge, 4 years ago and they are still there, not changed.
That is not food.
I showed her last week, and said, hey, don’t eat this stuff.
I’m keeping it in there with the dates written on them in sharpie.
Right next to the 20 year old cans of Iron City.

I read where over the doorway to some observatory in France is written something to the effect that a chief who discovers a new sauce has done more for the common man than anything done in here. Of course, it would be in France where something like that is written, but it applies to this recipe too.

Been doing this for years. But in Houston every Mexican restaurant and grocery store has a tortilleria so the quality makes it feasible.
Indeed, fresh made is superior but it aint pizza!

Instead of sauce, I put refried beans. For toppings, it's taco meat. Add a Mexican cheese blend and some Ortega taco sauce on top and put it in the oven. After it comes out of the oven, put a dollop of guacamole on it.

I use old el paso spicy enchilada sauce..
Since I was a regular for many years, my only regret was that I never asked them to show me how to make it at home.
I try to recreate it, but it's just not the same.
Now that I live north of Houston, my local favorite is the Mi Rancho restaurant near me. I won't go to a restaurant with a good green sauce.
