Every so often, I will buy a pack of snacking seaweed, just for the heck of it. It usually comes in thin, translucent sheets, about the size of a pack of cigarettes.
In my experience, most (processed) seaweed has a salty taste. Salty and nutty. I do it to feed myself some ‘good’ bacteria to the stomach. Some call such foods Probiotics.
Blue-Green Algae tablets became too costly.
Pretty sweet deal! I gotta eat seaweed, but I do get to hang out at the beach...
But we do feed our dairy cows free choice kelp and it does not make the milk taste fishy. Of course they are not eating that much of it. A couple ounces a day maybe.
I have heard that the cows like to eat kudzu. Heck. Where ever there is a supply of food, let the cows have at it. Kudzu, sea weed. Grass, Hay, keep them healthy, provide them with an abundance of food.
Thought my milk was tasting a little fishy lately.

My, my. That takes me back about 65 years or so, when my Dad and another man ran a small 40-cow dairy. When the clover bloomed, the milk had a distinct taste.
The fact cows have four stomachs might have some effect. The rumen is where all the fermentation of the grass takes place. By adding seaweed to the grass, it is an obvious start. BUT not all seaweeds are the same.

If you Google "Methane" and click on [News] you will find lots of
stories about how much more powerful methane is compared to CO2
as a greenhouse gas. But you will NEVER see anything that says how
much methane will actually run up global temperature. The reason for
that is because methane's effect on global temperature is so small as
to effectively be zero.
“Onion grass”. That would be Wild Garlic. Cows love it, but it does taint the milk flavor. I hated it, too.
