LOL! Actually, smoked or air-dried lamb is delicious. Edwards Smokehouse in VA used to make a great “jamón serrano” out of lamb. They called it “surreyano,” a combo of southern and Serrano.

Smoked lamb “ham” used to be popular in the 18th century US.
