Aunty’s daughter, Eilene and I, were an instant hit.
Aunty asked me, “Would you like to have an egg sandwich?”
“I’ve never had an egg sandwich. Yes, please.”
Aunty made an egg sandwich that included a fried tomato slice.
It was heaven.

Otherwise you are bastardizing an American tradition. Salt? Pepper? Toast? Who needs it? BACON? If you wanted a BLT just add lettuce!

Those tomatoes look fantastic, but I’d rather just go with a plate of tomatoes with hot buttered toast on the side.
Skip the tomatoes. Double the bacon.

Might try a tomato and onion salad. Sliced tomatoes and sliced Vidalia onions with blue cheese crumbles on top smothered in blue cheese dressing.
Cheap store brand white bread, cheap store brand mayo aka salad dressing, thick sliced red juicy tomato straight off the vine and warm from the sun and a bit of salt.
Pure heaven.
As a city kid, growing up I hated tomatoes. Then one summer my grandmother grew some in the back yard, and I realized that I had simply never tasted a ripe fresh tomato.
From that moment, I’ve been hooked. Summer is that season with ripe tomatoes and green zucchini for a few glorious weeks.

Or you just don’t like tomatoes.
There is no protein in that sandwich. A BLT will do it. Or, take cold slices of cheddar or your favorite cheese and add them. No melt this time- the cold cheese provides a little bite and salt and protein but the thickly sliced tomato remains the star.
If you can’t digest bread, use stiff iceberg lettuce. I do. It’s very yummy. Especially when the ingredients are all fridge cold except the just picked in the sun tomatoes.
I’m gonna catch hell, but I like BLT’s with Miracle Whip.

One beefsteak tomato, just picked and sliced- Hellman’s Mayonnaise on bread with tomato- salt.

What no fried green tomato?
Nothing is better than a ripe heirloom or beefsteak tomato on toast with mayo.

Best tomato salad: Start with coarsely chopped fresh heirloom tomato such as a Brandywine. Add a little minced garlic, a little olive oil, dash of salt, fresh chopped basil leaves and chunks of fresh mozzarella cheese. Mix and enjoy.
Best hamburger: Large heirloom tomato as big around as a hamburger bun. Cut a 1/2” thick slice and place over freshly grilled patty with lettuce and favorite condiments. Tomato slice should be as big around as the bun and patty.
