Bonus: Cup of lard from boiling the ham. I cooled it and skimmed the pure white lard. Used it for eggs this morning. Works great.

Cooking is fun with this virus going around. I’ve been checking out the discounts at Safeway. Tired of the $5 rubber chicken so i bought the Sandwich rolls. 2 Cheesesteak sandwiches and then 2 rubens using pastrami. Then there’s the slo-cook recipes. Prepare everything the night before get up early the following ,morning, plug it in and then forget about it. Loads of fun.

Growing up, every once in a while my dad would make fantastic tacos.
A few years ago I made an Alton Brown pie crust recipe that called for half butter and half lard. for a special occasion. (Yummy) Well had a bunch of left over lard.
So I decide to fry some taco shells in lard. Then I understood how my dad made fantastic tacos. They were so good.
When I hit 80 years old, I’m frying all my food in lard, starting with french fries!
