Taiwanese Ice Cream Burrito

Tucked deep into Taipei’s night markets, vendors disguise scoops of ice cream as a savory snack. Customarily, Taiwanese cooks fill their flour crepes with pork, cabbage, and ground peanuts to make a traditional roll called run bing (a relative of the Chinese breakfast jiānbǐng). But street hawkers use this same wrap to swathe a sweet-and-savory treat.

To assemble, the vendor lays out a flour crepe and shaves fine pieces of peanut brittle over it. On top, he adds three scoops of ice cream, often in flavors like pineapple, taro, or peanut. After a sprinkle of cilantro (the soapy-to-some herb can be omitted, on request), he folds the edges in and rolls up the contents into a burrito-esque creation. The combination of flavors and textures achieves a balance of creamy, crunchy, chewy, sweet, herbal, tart, and nutty.

Not really what I want on a cold snowy Feb day, I would prefer machaca, still it sounds good sans the cilantro.

Anytime of the year is a good time for ice cream here in Texas.

Cilantro is a staple on most Mexican dishes. I like it.

NATIONAL BAKED ALASKA DAY
Ice cream and cake come together on February 1st in a celebration called National Baked Alaska Day.

An elaborate dessert that is also known as “Omelette Norvegienne,” Baked Alaska is made with hard ice cream on a base of sponge cake and covered in a shell of toasted meringue.

In the United States in 1867, an earnest debate erupted over the potential purchase of Alaska from Russia. Secretary of State William Seward agreed to a purchase price of $7 million, and Alaska became a United States territory in 1868. Those of the opinion that the purchase was a giant mistake referred to the purchase as “Seward’s Folly.”

Enter Charles Ranhofer, the chef at Delmonico’s Restaurant in New York City. He was notorious for naming new and renaming old dishes after famous people and events. Capitalizing on the heated controversy surrounding the purchase in the frozen north, Baked Alaska fit the bill. It was cold, nearly frozen, and quickly toasted in a hot oven before serving.

He served as the chef at Delmonico’s from 1862 to 1896. During his tenure, he also created Lobster Newburg, another famous dish honored with a national food holiday.

I lived in tx for 27 years, 1st time I had cilantro was in ca and it did taste like soap to me.

I like it now.
