Get thin fillets of tilapia, oil up a skillet with olive oil and garlic then lay the fish in there. It’s thin, usually, so mind it closely. Add butter, a little salt — I’ve put a bit of Gulden’s brown mustard on it, before. Keep it moving, get it in, get it hot, and get it out.
Have everything else hot & ready to serve; rice, vegetables... Or crisp it with a little batter and serve with a splash of vinegar and steak cut French fried potatoes.
Yeah, OK, so catfish would be better, but tilapia can be fine cooked right.

L.A.River is a storm channel that goes all the way to the ocean. It WAS an actual river before a hellacious flood in 1938 drove the City to widen it, line it with concrete, and convert it into a marvel of flood control engineering.
I am familiar with the history of the Los Angeles River, and the rest of the SoCal rivers tamed by the Army Corp of Engineers.
I won’t touch Chinese tilapia.
Grew up overlooking the Santa Ana.
Biked the river trail to the beach.
Never fished it, tho.
Santa Ana River is rip rap.
L.A. River much more impressive in concrete.
We used to pass over the Santa Ana River on PCH, on the way to the Wedge.
The Wedge is a hot spot, for sure.
Not today, tho.
Way mellow today unless you go way south; 5-7 around San Diego.
I never bought a stick; just did body or Boogie Board. Loved the beaches. Hardly go, anymore; Nor Cal’s freezing, and I don’t have a suit.
You seem unfamiliar with the taste of mullet — the fish, not the haircut.
The LA River is right at the end of my block....about a half block away. I love the LA River and it is being rejuvenated now and there are plans to make the whole area a strong city presence.
The city had to prove the river was navigable [not easy]....but the river overflows onto the freeway almost every year. Kids playing in the river perish is they are not careful.
To see LA from the spot the settlers did, is awesome. you can see why they thought it was perfect. lots of land to farm....a mighty river and lots of great weather.
I have lived next to the LA River for years. Atwater Village is a storm plain ...people used to have cases in their garages.
Even now, in a heavy rain, people drown....it is deep, fast and powerful.
Millions of the illegal aliens in LA will love it! Btw, I hear Obiden is getting ready to open the flood gates just south of LA once again.
No doubt, that is to be expected. It in no way affects my love for this great city.
Biggest problem is it’s pretty mellow so much of the time that people get a dangerous sense of complacency about it, like it’s been thoroughly tamed.
Sure comes alive when it rains, though, and shockingly quickly, which is how people get caught off guard and swept away. Plus those islands just make it seem so hospitable.

After seeing how tilapia is farmed, I’ll pass.
Tilapia is the junk food of fish.
