Growing up in India, only chickens we could buy were live chickens. I learned how to cut the neck quickly and dissect every part. We had to be very careful with the gall bladder to not spill its juices. What they say about a chicken with its head cut off is entirely correct.
I could truss a chicken in less than a minute
I missed that one.
Taking apart critters is pretty easy except those little bombs like gall bladders and scent glands.

And he provided many of the drawings and paintings for his many cookbooks. His cooking series for PBS were among the best. He never showed off his skills or made things seem intimidating or complicated. Just the opposite. Speaking of his rural boyhood, I’ve never forgotten his description of eating not from plates and bowls but from a shallowed-out depression in the wooden tabletop. And didn’t he earn a doctorate in French literature or poetry along the way?
Not sure about French literature, I bet he read Alexandre Dumas and Voltaire, I have.

Honestly the only thing I miss from India is my mother’s cooking, bless her soul. She was such a good cook, all her friends and relatives insisted she write a cook book and she did finally publish one at age 70. It sold out quickly. Later on she immigrated to USA and lived to age 103. I am 80 now and aiming for 100.
