Taken with a nice tall, chilled glass of Aquavit (or Glugg for the mulled wine fans) a plate of Lutefisk is excellent dining.

For us Danes it’s herring with raw onion on a cracker and akavit from the freezer.

I’ve had it at Christmas in northern Minnesota.
Not a fan of the flavor or texture.
I just can’t grok the reasoning behind taking good salt cod, soaking it in lye until it takes on the texture of jello. For the express reason of eating it.
