Why are my San Marzano tomatoes still green? They’ve been full sized for about a month.

Usually it’s extreme heat that stops, slows or prevents tomatoes from ripening. Where are you gardening? (Zone) Have you been in a heat wave?
“The optimum temperature range for ripening mature green tomatoes is 6877 deg. At the same time, tomatoes do not produce lycopene and carotene, the pigments responsible for ripe tomato color, when temperatures are above 85 deg. F. So, extended periods of extreme heat cause tomatoes to stop ripening.”
I might try to pick some green ones and see what happens. They go to market green.
Mine started turning 2 weeks ago here in the pacofic northwest.... when the nights started to dip to low 60s high 50s (58-59) the San Marzanos began to ripen.
I think it is related.
This is my 1st time geowing them. My heirlooms have been ripening previous to the cool night time temps...in the 70s.
