I’ve got to start doing that with store-bought Romaine, though I have a bumper crop of salad greens so far this season.
That sounds so good! I love carrots with an orange glaze, though Ree Drummond makes these awesome Whiskey-Glazed Carrots that I make to rave reviews during Thanksgiving and Christmas on years when it’s my turn to cook:

Mmmmmm.....Ree’s recipe takes pedestrian carrots to the moon.
With any luck I’ll have more winter squash this fall than I know what to do with. I’ll be happy to share, as long as you send me back the seeds from them!
