I searched for the original directions on canning butter and cheese, and if I still have them, they’re on a thumb drive, somewhere... So, I did some searches. I found one site with what seem to be the same directions. All other directions used pressure or water bath canning for the butter, which was not the way I tried.
Now, huge caveat - all the official sources etc say do not can dairy products at home etcetc. So, having said that, here are the methods to can butter and cheese. I did can butter this way, but never got around to trying the cheese; mainly becaucse it keeps in the fridge unopened for a year. If it doesn’t get eaten...

If anyone wants to know how I make and can ghee, let me know.
Thank you!!
As luck would have it, my internet went out today. I’m out in the country, and it could just be it had too much activity with everybody staying home. Or I could be paranoid and think it’s all about me ....
I will read everybody’s post as soon as I can without staying up till midnight. I hope everyone had a good time here and i know there has been informative things posted because Freepers are awesome and Freepers that prep are the best!
I would love the ghee instructions.
I love this way of canning better. Don’t need to pressure or water bath can at all. Sounds like the premise might be the same as dry canning for beans and rice, where you heat them in the oven and then put the lid on and as the air cools it condenses creating a vacuum.
How long does your butter last this way?
I have a cool basement though so your millage may vary.
Note: do not do this with cream cheese. It tends to melt into the wax and make a mess.
I found some fairly inexpensive butter at Sam’s Club today. I was excited to see it so I can practice canning. it’s in 1 lb blocks, so it was slightly reduced from the regular butter price.
