I too make a “fois gras” out of chicken livers too. I use Kirsch (cherry brandy liqueur) in my recipe. To be honest I don’t like the idea at all of stuffing food down the throats of those birds, enough so that I do not enjoy fois gras at all.

I live in Spain and foie grass is sold in all of the supermarkets. If someone came in and tried to ban it they would probably end up with a tube stuck down their throat and another stuck up a different hole.
