Some people heard it as a boom, some as a bang, some as a series of explosions. Imagine the noise of a dump truck being dropped from 100 feet in the air onto pavement. It shook buildings.
Many people said it sounded like it was coming from inside their building on their block. But it wasn’t just local; people heard it around the same time across a huge swath of northern New York. In response to an Enterprise Facebook post, people wrote that they had heard it as far west as Cranberry Lake, as far north as Malone, as far east as AuSable Forks and as far south as Eagle Bay, plus throughout the Tri-Lakes villages.
That boom was heard in Saranac Lake 10:13 a.m. Some people also reported hearing a later one, perhaps around 1 p.m.

Why is it that the sonic boom only occurs at the moment the plane crosses Mach 1?
The answer is: It doesn't. Sonic boom first occurs when the plane crosses Mach 1 and the plane continues producing sonic boom as long as the speed stays above Mach 1.
Another part of your question is:
How come sonic booms only occur once?
And the answer is: because the plane flew over you once. If the plane were to turn around and fly over you a second time you'd hear two sonic booms.
When you hear a sonic boom it doesn't mean that that boom was generated at Mach 1. It only means that the boom was generated at speeds equal to or greater than Mach 1. For example, a plane travelling at Mach 3 would still produce a sonic boom but you'd still only hear it once because the “boom” would only reach your ear once.
To understand this you need to understand what a sonic boom is.
Various parts of the airplane generate sound. Form the roar of the jet engines to the whistle of the skin of the aircraft moving through the air.
When travelling at normal subsonic speed. These sounds travel normally through the air and what you hear is a continuous sound of an airplane flying.
When travelling at or faster than the speed of sound, all these sounds arrive at your ear simultaneously. That is to say, if normally you'd be able to hear a plane passing overhead over a period of 10 seconds (for example) then at supersonic speeds all those 10 seconds of sounds (engine roar, woosh of the wings etc.) arrive at your ear at the same moment.
Since all the sounds you'd ever hear from the airplane arrive at the same time, the result is a very loud boom (all the 10 seconds or more of sound added together).
That's why you only hear it once typically.
There are exceptions though. If the plane is long enough, and the nose and tail generate loud sounds, it is possible to experience a double sonic boom caused by the tail generating a second boom. But generally, even a very long plane like the 747 or A380 (or Concorde) would take only a very tiny fraction of a second to travel the length of their body at supersonic speeds. You'd probably need a plane a mile long to experience a proper double boom.

when we were kids- we used to hear what they called ‘sonic booms’ all the time- jets- had one fly right over us and had it happen- then some sissified complained, breaking the sound barrier became a huge no no- and now you very rarely hear it and when you do, it becomes a national scandal

There was one a couple of weeks ago here in NEPA. One of my neighbors is a retired NYS Trooper. He texted me as to what was happening (29 years Vol First Responder) and I had no idea..it was an explosion though! He went searching - we both thought a clandestine meth lab let loose..

I live a little ways outside of a designated dark sky area and spend more time outside late at night than the average person. In my opinion weve had an unusual number of small objects entering the atmosphere this year. Ive seen some really interesting things over the years that I just don’t have a good way to explain. I cant quite likely due the fact that I don’t have any formal education in astronomy.
Of course I see a lot of shooting starts as they sail past but a month or two ago I saw a very strange batch that I just don’t have the ability to properly explain except by using sci-fi type references so please forgive the following insane description.
I assume you are familiar with the blaster bolts one sees in some movies. Two, maybe three, foot long beams of solid light maybe a half to an inch in diameter in appearance moving far too slow for a “laser”. Unlike in the movies these were solid white.
I was looking up into the milky way just northeast of the central pole that holds up the vault of the sky when several of these white blaster bolts were fired at the non-existant person just to my left. Whatever substance these were actually made of must have been quite hard and heat resistant as these were solid, they had no trails or particles flying off to the sides. They flew in and each detonated at the same elevation as though hitting what appeared a solid planetary defense force field like we see in movies. There was a brighter impact point where it hit “the forcefield” then the bolts shattered and sent a cone of glowing particles skidding like a fistful of sand along the curvature.
With all my years of better than average opportunity Ive never seen anything vaguely like it. I wish I had had a way to record it because Im sure that few have. If I had Im sure that someone would claim I done it with some special effects software, then again, maybe I could have sold it to someone like Icke and become rich as the leader of a new space lizard cult.
We need to train gray aliens to obey noise ordinances. ;-)
