The Weekly Gardening Thread is a weekly gathering of folks that love soil, seeds and plants of all kinds. From complete newbies that are looking to start that first potted plant, to gardeners with some acreage, to Master Gardener level and beyond, we would love to hear from you.

If you have specific question about a plant/problem you are having, please remember to state the Growing Zone where you are located.

This thread is non-political, although you will find that most here are conservative folks. No matter what, you won’t be flamed and the only dumb question is the one that isn’t asked.

It is impossible to hijack the Weekly Gardening Thread. Planting, Harvest to Table Recipes, Preserving, Good Living - there is no telling where it will go and... that is part of the fun and interest. Perfect for gardeners. CHEF'S NOTE Skip the lasagne noodles. Roast veggies in strips and layer.

Roasted Zucchini and Eggplant Lasagna
ING VEG 1½ pounds ea zucchini, eggplant in ½-inch pieces roasted with 5 tablespoons evo 6 garlic cloves minced, s/p, in 2 greased/rimmed baking sheets, stir occasionally, til softened and golden, 400 deg 35-45 minutes; set aside.

ING SAUCE onion chopped fine 28-ounce can crushed tomatoes 28-ounce can diced tomatoes 2 tb chopped fresh basil

ING LASAGNA 12 no-boil lasagna noodles option 3 cups 12 oz whole-milk mozzarella shredded 2 cups Parm

FINAL Heat 2 tb oil on med til shimmering. Add onion and sweat/soften 5 min. Stir in 3 minced gar/cl; cook fragrant, about 30 sec. Stir in crushed tomatoes and diced tomatoes w/juices; bring to simmer, and cook 5 min to meld flavors meld. Offheat, stir in basil and s/p.

ASSEMBLY: Layer in 13 by 9-inch baking dish cup Sauce, 3 noodles, one-quarter of veg, then top with cup sauce;3 cup mozzarella, and 2 cup Parm (in that order). Repeat layering process 2 more times. Top with remaining 3 noodles, remaining vegetables, remaining sauce, remaining 1 cup mozzarella, and remaining 1/2 cup Parmesan.

BAKE Cover dish tightly with greased foil, place on foil lined rimmed baking sheet; bake 400 deg 15 minutes. Uncover, bake until freckled and bubbling at edges, 30-35 min. Cool 10 min before serving.

SERVE garnished with chp basil.

The pickles are still coming in. Now we are starting to give them away. Put 3 pints of brandies peaches. If they come out good, will put up some more. Cherries, apricots and plums work too.

With today's news, I'm heading outside to work on prepping for next year's garden. Didn't have time to do one this year. Was busy clearing a fence line through forest for 12 acres.

No sense in sitting at the computer all day, reading about "conspiracies".

No eggplant, but I have LOTS of zucchini coming on! :) Great idea to replace the noodles with slices of veggies.

We are hooked on the spiralized zucchini ‘zoodles’ these days, now that Beau has been BANNED from planting Spaghetti Squash. Ever. Again.

What a nightmare THAT season was, LOL!

No kidding. I’ve got a lawn to mow and veggies to pick and a garden to water and puppies to train.

I don’t know how some of the shut-ins at FR can handle it all day long, every day! ;)

Cool last night! I was glad that my bananas, jasmine and basil plants were on the table under the umbrella on the deck. Being 8 feet from the ground plus the height of the table has saved some of my most delicate plants.

The bugs are getting to be a problem, though.
