I don't usually go for rat meat... But when I do, I prefer the best from the Ivory Coast!

When I was in Cote Ivoire, consulting, while out in the field one of the locals took off, grabbed something by the tail and was swinging around like a bucket with water in it so it wouldn’t bite him. A rather interesting hunting technique.
It was a rather large rodent, more like a possem and a delicacy. Never ate it that I know of...
..
Kedjenou (a ragout with chunks of meat): The meat could be wild game, chicken, or goat and it also includes chopped onions, tomatoes, and fresh ginger. Be specific about what type of meat you want or you might end up with agouti (a rodent known as the Grass Cutter or Greater Cane Rat). Its an Ivorian delicacy.

Can’t comment on rat meat, but squirrel is pretty tasty, and they have a family resemblance.

Free range rat. I s'pose that's good eatin'. If you've ever ridden the State Street subway, the Red Line, what used to be the Howard El, you would understand the importer's aversion.
You have to shoot for between the eyes. Brain shot. They charge when they are wounded...

I gotta give the guy credit for being honest.
