I wasn’t though. Not that I wanted Boohoo. But Ryan was no better. Wasn’t one of them from the freedom caucus going to run against Ryan and then ended up caving? Such a typical Republican disappointment. McCarthy will be the same thing. He was my representative in Bakersfield, He and Bill Thomas who he replaced are just establishment. I heard an ad the other day promoting “conservative McCarthy” and I wanted to throw up in my mouth.
That’s true, until we get a really good alternative, we might as well just make it easier on ourselves.

Have you ever heard the music of Little Big Town? The blonde lady singer likes to cook, and she appeared on a cooking show a few years ago demonstrating her Grandma’s recipe for stuffing. I tried it one Thanksgiving and it was delicious! (Very rich, though—don’t mention it if there’s a cardiologist around.) It had biscuits in it as well as cornbread and lots of other good stuff. Don’t recall if it was crisp on top, but it was so good that you didn’t need gravy. IIRC, her name is Kimberly Schlappner, and their big hit was something like, “Down in the Boondocks.”

ALS is a horrible disease. I’m so sorry you lost your sister to it. A colleague of mine was diagnosed with it and only lasted first months. I had never heard of the disease until then.

INGREDIENTSSTEP-BY-STEP DIRECTIONS
SOUTHERN DRESSING AND GRAVY
Dressing
6 cups crumbled cornbread
2 cups crumbled biscuits
4 cups chicken broth
1 cup milk
2 eggs, beaten
1 cup finely chopped onion
1 stick (1/2 cup) melted butter, plus 1/2 1 stick cold butter, cut into small cubes
1 tablespoon chopped sage
2 teaspoons salt
1 teaspoon freshly ground black pepper
GRAVY
4 tablespoons butter
4 tablespoons all-purpose flour
2 cups whole milk
1 cup chicken broth
salt to taste
freshly ground black pepper to taste
Cornbread
Nonstick cooking spray
1 large egg
1 1/2 cups buttermilk
1/4 cup melted butter
2 cups self-rising cornmeal mix (Martha White)
pinch of salt
BISCUITS
2 cups self-rising flour, sifted
1/4 cup coconut oil, cold (refrigerate to solidify prior to measuring)
3/4 cup cold milk
Melted butter for brushing
Preheat oven to 375°F.
To make the Dressing:
In a large bowl, mix the cornbread, biscuits, chicken broth, milk, eggs, onion, 1 stick melted butter, sage, salt, and pepper. Pour the mixture into a greased 9x13 baking dish and dot with the ½ stick cubed butter. Bake for 45 minutes, until brown.
Meanwhile, make the gravy. Heat the butter in a small saucepan over low heat. Add the flour and cook until it comes together and starts to foam, stirring constantly, about 1 or 2 minutes. Slowly whisk in the milk and continue to whisk until it become thick. Add the chicken broth and whisk to combine. Season with salt and pepper. Serve with the dressing.
For Cornbread:
Preheat oven to 425° F. Grease an 8 inch cast iron skillet.
Mix the egg, buttermilk and butter in a bowl. Add the cornmeal mix and stir. Batter should be pourable. Pour batter skillet three-quarters full. Bake in oven for 12-15 minutes.
For Biscuits:
Using your fingers, mix the flour and coconut oil very well until it feels crumbly. Add the milk and mix together but don’t over mix. Once you add the milk, turn over once, at most twice or dough will become tough. After kneading dough just a couple of times, roll it 1/2 inch thick onto a floured surface and cut into 3 inch rounds. Bake for about 12 minutes, and liberally brush the biscuits with melted butter. Bake for 3 more minutes, until golden.
Note: Avoid over-kneading the biscuits to keep them tender and flaky.
