Try giving tea or coffee to the passengers where everything floats away...
:)

It’d be a short-lived career, yes? Due to multiple radiation dose exposures similar to what astronauts experience?

Yep in the event of an emergency in outer space, knowing where the flotation devices are would be a definite plus. Those emergency exits, too.

>>how to defend themselves and others against unruly passengers and hijackers
not much you can do with hijackers on a space tourist flight
neutralize the threat or listen to their demands

I wonder if it'll resemble the flight attendants on Lucky Airlines in Putney Swope.

Why do they need flight attendants? The passenger preparation for the flight should be enough. This is how you eat, this is where everything is, this is how you go to the bathroom. This is your space suit and this is what not to touch while in it. Here is the escape pod which you will enter that of course will not save you, however you will have a great view of space while you run out of oxygen.
Not much more to it than that. For each flight, someone from the flight crew will be the representative to the passengers, strictly for consistency.

The space station has had space tourists and there was no cocktail waitress/receptionist/nurse/sales lady on board.

On space flights weight (mass, actually) will have to be managed carefully. More mass means more fuel is needed. Every extra ounce matters! The flight attendants should be attired with that in mind.

Not necessarily, I dont know but offer the following for consideration.
One of my uncles did emergency repair work for nuclear power companies. He was pretty much on call at all times. When he went in, the location of failure or type of failure would often expose him to a high level of radiation. He might only wind up working for 20 minutes before he reached maximum safe exposure levels then would turn the problem over to a team member and go back home. Despite having only worked for 20 minutes, he was still paid for a whole day.
Its possible that pilots and attendants might only work one flight a week or some similar rotation yet still get paid for a full week.
