Isidore Verheyden - 'Afternoon Tea'
Ive always been attracted to the various forms of traditional English Tea Time, and found that Chef John of Food Wishes' has done a video on making clotted cream at home. His method is very easy, and just involves heating the cream in the oven at low temperature for many hours, cooling, chilling, and then skimming off the solids that rise to the top. Im sure its not as good as the authentic product enjoyed in Devon or Cornwall, but it looks pretty good.
This is very simple, but takes many hours over several phases, so you will want to start a couple of days ahead if youre planning for guests; and my choice would be to have it with Black Raspberry Jam on scones :-)

For a savory afternoon tea, you might want to try Coronation Chicken, a curried dish originally created as a salad dish for the coronation of Queen Elizabeth II; but it makes a very nice tea sandwich filling, and there are many versions of it. Heres one from the BBC and the Hairy Bikers:

I’m good friends with a Persian great cook and she never mentioned sumac. Introduced me to saffron. I’ll ask her about this.

There used to be a Swenson’s Ice Cream Parlor at Jackson Square in the French Quarter. I loved their creole cream cheese paired with their bittersweet chocolate ice creams.
COCONUT LIME ICED TEA
METHOD Add 8 jasmine tea bags to 6 c boiling water; steep offheat 5 min. Add/dissolve 1/4 c sugar.
Add 1/4 c ea h/cream, plain coconut milk, lime slices. Cover/fridge til cold.
Serve in tall glasses.
I cannot stand any of the cooking competition shows on the cooking channel. I spent a month with my mother this summer & I watched the British baking show with her. I found it charming and delightful. Maybe being with my mom made it more delightful, but find the cooking channel competition shows to be loud & obnoxious.

Agree. I fell in love with the British Baking Show and I binge watched it with my mom too. Even with Alzheimers she loved it. And she could never stop commenting on how beautiful Paul Hollywoods eyes were. Lol!
It is so charming.
I also loved the Taste, and I got a huge crush on (to me) the only good looking French man, Chef Ludo. And Anthony Bourdain was so obnoxious, always trying to get under Ludos skin. (I pass Ludos new restaurant every week now and one day Im going to eat there... Just need some time and $...)
I found sumac in those tiny cardboard spice boxes in some grocery stores. They have a million spices. No jar, very cheap and tiny amounts.
Doesnt Boston brown bread have to be made in a tin can becuse it wont hold its shape?

This is so Off Topic from merry olde England, but I have become obsessed with this recipe and I am making it once a week now, maybe forever.
Its spicy but the tofu tastes better than tofu has a right to taste. You can throw in some broccoli or mushrooms or whatever. With rice of course.

THE DEVIL'S CREAM TEA
METHOD Fill homemade cheese scone with Philadelphia brand cream cheese, add a large dollop of Chili Jam.
Wash down w/ glass of chilled Apple Cider.
ALTERNATE MENU use plain scones and clotted cream washed down with with Pear Cider or Apple Jack.
That looks so good! The tofu looks spicy & really browned. I’ve told this story before: my late father used to make the most delicious tofu burgers. They had chili powder, onions sliced & textured vegetable protein. Sounds maybe repulsive, but NO. They were so delicious & savory. I have tried to recreate them a bunch of times. Sadly without success.

I’m not sure if it’s done in a coffee tin for that reason or just tradiditon; but it is usually steamed rather than baked, so the shape probably works for that method.
I’ve never made it; we always bought the canned stuff when I was a kid.
