Weve had a lot of posts about the Instant Pot over the past few months, and many of us have marveled at how well it cooks meats; but you can do a lot more with it than that. Cheesecake is something that does well in the Instant Pot, and there are recipes all over the Web for various versions. You will need to find a 7-inch springform pan to fit into the 5, 6, or 8 quart Instant Pot. There's currently one available on Amazon for about $12 but Im scouting my thrift store first.
One thing that people have found frustrating about the Instant Pot is that many recipes for it don't include in the timing how long it takes to get up to pressure; and they find that the Instant Pot isn't as 'instant' as they had thought. But when it comes to something like Cheesecake - or pulled pork or a roast - the Instant Pot really does cut down the cooking time. It certainly won't make every dish come out its best, but can save a lot of time with certain recipes.
I think Ive mentioned several times how much I like the hot sauce (particularly the Fire version) at Taco Bell, and that I've wished that they would bottle it. Well, they do! and have apparently been doing so for several years. My husband happened to find a bottle of Diablo in the local ethnic store recently, and I was in heaven; but they also bottle and sell the Mild, Hot, Fire and Verde sauces. If you cant find it at your local grocery, Walmart, or Target, this, also, is available on Amazon.
(I dont know what it is about it that I like so much; it just seems to have a clear, not-at-all-sweet taste that I like. I havent found any other bottled hot sauce that I like as much, and now I dont have to shame myself by sneaking a zillion packets into my bag at the eatery ;-)
The National Cornbread Festival is taking place this coming weekend in South Pittsburg, Tennessee, and one of the sponsors is Lodge, of cast-iron fame. Their newsletter this week included a recipe for Upside Down Peach Corn Bread, which they make in their cast-iron mini cake pan; but I think you could do this as one big cake in a skillet, as many of us do Pineapple Upside-Down Cake:

So clever using serving pieces one would not associate with serving cake......stacking them and arranging them in a breathtaking display.
Very different and artful. There were a lot of surprising things about this wedding, and I enjoyed watching it.
Kensington Palace released the menu on its website the day of the wedding, stating that Queen Elizabeth II will be giving a reception at Windsor Castle for 600 guests after the ceremony. The menu started with seven different canapés, which are small, decorative hors-doeuvres. These seven canapés included:
Scottish langoustines wrapped in smoked salmon with citrus crème fraiche
Grilled English asparagus wrapped in Cumbrian ham
Garden pea panna cotta with quail eggs and lemon verbena
Heritage tomato and basil tartare with balsamic pearls
Poached free-range chicken bound in a lightly spiced yogurt with roasted apricot
Croquette of confit Windsor lamb, roasted vegetables, and shallot jam
Warm asparagus spears with mozzarella and sun-blush tomatoes
Bowl foods After the spread of delicious canapés, the guests indulged in a selection of bowl foods. These bowls included:
Fricassee of free-range chicken with morel mushrooms and young leeks
Pea and mint risotto with pea shoots, truffle oil, and parmesan crisps
Ten-hour slow-roasted Windsor pork belly with apple compote and crackling
Before diving into that gorgeous wedding cake, the guests were served a selection of sweet canapés. Those canapés included:
Champagne and pistachio macaroons
Orange crème brûlée tartlets
Miniature rhubarb crumble tartlets
The wedding cake was designed by Claire Ptak and features elderflower syrup made at The Queens residence in Sandringham from the estates own elderflower trees, as well as a light sponge cake uniquely formulated for the couple. Unlike other royal wedding cakes, their cake did break royal wedding tradition. Typically, there is only the one type of cake every British royal has served at their wedding. Their actual cake wasnt piled on tiers, but was elegantly displayed as separate cakes on golden plates.
According to Kensington Royals Instagram, the lemon elderflower cake with buttercream frosting was made with 200 Amalfi lemons, 500 organic eggs from Suffolk, 20 kilograms of butter, 20 kilograms of flour, 20 kilograms of sugar, and 10 bottles of Sandringham Elderflower Cordial.
Its a sponge cake filled with Amalfi lemon curd and elderflower buttercream. The cake was designed by Claire Ptak, the baker at Londons famous bakery Violet Cakes. The cake was decorated with white Swiss meringue buttercream and 150 fresh flowers (mainly peonies and roses).
Guests sipped on Pol Roger Brut Réserve Non Vintage Champagne and a selection of wines. Soft drinks were also served, including an apple elderflower mocktail. The mocktail was made with the same elderflower syrup as the cake, along with Sandringham Coxs apple juice.
Later Prince Charles hosted a second more intimate reception.
I thought she played it cool choosing the plain but elegant dress that was not "wedding-ish" since she's been married and divorced.
At the wedding of soccer star David Beckham and Victoria, the assembled guests sipped on Laurent Perrier pink champagne, elderflower cordial with raspberries, and Sicilian red orange juice.
They also nibbled on canapes by Jalapeno, the company co-owned by Charles Howard, and chef Jason Reynolds. Among the delicious selection were Asian chicken skewers served with an orange dipping sauce, miniature leek and cheese tartlets topped with tomato and red onion salsa, baby potatoes with cream horseradish sauce with chilli-marinated beef and fresh rocket leaves, flaked lobster and salmon on a baby French croute with cavia, grilled basil chicken with a rich purple plum chutney, and tuna nicoise with a tasty basil dressing.
The winning menu consisted of a delicious roasted red pepper and tomato soup served in hollowed out pumpkin halves instead of plates. This was followed by free-range corn-fed chicken with English asparagus, roast potatoes, a French bean and sugar snap pea medley, and a herb jus. For the vegetarian guests, chef Jason Reynolds made sure that they were catered to the same high standards. They were served Irish Brie with sage, which was deep fried and served with cranberry sauce.
For dessert, Victoria and David had chosen two different puddings for the different tastes of the gentlemen and ladies present. The men were treated to Davids favourite sticky toffee pudding with butterscotch and the women were given summer berry terrine with summer fruits in brandy snap basket with raspberry coulis.
As the guests enjoyed the delicious meal, an 18-piece string orchestra seated on a ten-foot tall mezzanine draped in white voile played a selection of Spice Girls hits, including Say Youll Be There and Mama as well as classic melodies such as Cheek To Cheek and Night And Day.
At just before 10.30pm, the master of ceremonies rose and announced the cutting of the cake, a lavish three-tier creation by Rachel Mount, featuring one tier of traditional fruit cake, one tier of vanilla sponge and one of carrot cake. In the continuation of the Robin Hood theme, the entire cake was smothered in green and purple leaves, made of icing, while the supporting pillars for each tier were made of red apples. Sitting on the very top was a fondant sculpture of a naked David, Victoria and Brooklyn.
After the meal, the guests were given coffee and petit fours which included orange zest coated in dark chocolate, nougat dipped in chocolate and a hazelnut praline log. The wine served was Cotes du Rhone red and an Australian Chardonnay.

Rice Krispie Treat Fudge
Ingredients:
3/4 cup heavy whipping cream
3/4 cup unsalted butter
2 cups granulated sugar
pinch of salt
11 ounces white chocolate chips
7 ounces marshmallow cream
2 1/2 cups rice krispies
3 cups miniature marshmallows
3/4 cup mini chocolate chips
Directions:
In a large saucepan, add heavy cream, butter, sugar and salt. Heat over medium high and bring to a boil, stirring constantly. Once boiling, continue to stir and boil for a full 4 minutes (a good rolling boil). Remove from heat.
To a large mixing bowl, add white chocolate morsels and marshmallow cream. Pour hot sugar mixture over this. Using an electric mixer, beat until white chocolate is melted and creamy (about 1 minute). Fold in mini marshmallows and cereal.
Pour into an 13 x9-inch baking dish that is lined with parchment paper. Sprinkle immediately with mini chocolate chips Refrigerate for 3 hours, or overnight.
Cut into 64 bite-sized pieces.

It was reported they were going to have food trucks at the reception.......Dirty Burger was one of them.
Yes, that was a nice touch.......since their royal duties encompass the Commonwealth.
I wondered it it meant all the Nations, or only the realms. (It was certainly long enough for the former ;-)
