Many of my friends oppose hunting, and while I share some of their views especially concerning mere trophy hunting, which I do oppose I question the logic of their conclusions about deer. I have never shot an animal. I dont own a firearm or archery equipment. I fish, and Ive considered deer hunting, but Ive never cleared the early hurdles: the expense of buying the gear and the time required to hone the necessary skills. Its a daunting prospect for a beginner, especially one like me, whos never had anyone to show him the ropes.
Recently, a friend has offered to do just that. Hes a Navy SEAL who has served as a sniper and as a combat medic; that strikes me as a perfect combination of talents for the person willing both to train me and help me survive antler-impalement. Indeed, if Im hesitating now, its because Im wary of ruining my friends hunting experience with my ineptitude. Hes accustomed to working with highly-trained special operatives who can move in stealth and communicate paragraphs with a few hand signals. I tend to barrel through the woods with the grace of a rhinoceros and have a 5-year-olds knack for asking annoying questions at the worst moments.

I love eating deer. Does that count?
I do like venison as a goat/beef substitute in curries.
If you love eating vegetables, you must love farming or farmers
If you love to eat fish, you must love fishing or fishermen,etc
If you love Freedom, you must be ready and willing and prepared to fight.
I no longer have the joy of killing things unless it is vermin. I live out in the countryside on several acres. I have abundant game, turkey and deer.
I allow two friends to hunt on my land. They are accomplished and ethical hunters. They keep most of the meat and I get a portion. It is a hell of a good deal for me. They kill it, dress it out and give me my portion. So far this year 5 deer taken and 1 turkey today. Beef is good but it can not compare to properly butchered and prepared venison and wild turkey stew is a unique taste that has no resemblance to a turkey you buy in the store. It is good.
Ethical hunters are wild games best friend. If not for them we would have cycles of over population and then subsequent starvation. Ethical hunting in accordance with the Texas Wildlife Commissions rules maintain the wildlife at it prime.
The Texas Wildlife Commission are good guys.

I’ve eaten quite a bit of venison but without heavy sauces and seasoning, it doesn’t rate 2nd best to store bought beef.
It hasnt been properly cooked if thats the case. Most cuts should be seasoned lightly and seared over high heat to a max of medium rare. Tougher cuts should be braised or slow roasted.
I put up 3 gallon of canned venison stew this year and Ill take it over beef stew any day. Then theres the venison jerky...

My statement included farm raised venison cooked by restaurant chefs. I never had a venison cut that rated comparably to similarly prepared beef, or elk.

Venison is fine for stews and jerky.
My first experience with venison I sliced thin medallions, seared them and put them on a cracker with some goat cheese and raspberry chipotle sauce. I still have people call me for the recipe.
Coffee Rubbed Venison Tenderloin
1 Backstrap, doe is preferable.
3 Tbsp finely ground coffee
1 tsp salt
1 tsp finely ground black pepper
Sauce:
2 cups blackberries, fresh
1 tsp fresh sage
8 ounces red wine
Heat oven to 350.
Coat a pan large enough for the tenderloin with olive oil and heat to high.
Roll tenderloin in coffee spice mixture.
Sear in hot pan until seared on the outside. 2-4 minutes max.
Put in hot oven for 5-7 minutes until max of medium rare.
Place raspberries, sage, and wine in sauté pan and reduce until it coats the back of a spoon.
Slice tenderloin into medallions and place on warm plates. Drizzle with blackberry sauce. Serve immediately.
Better than beef, almost as good as elk.

I saw eight does nose to tail in a train through the woods this frosty morn. Took a shot at a different doe. I missed because I was too excited and I think I used the wrong pin.

We eat venison, bear, elk, fish, wild hog, turkey and rabbit. I’m getting pretty good at cooking it all, but I’m always experimenting.
I have all of this abundance provided me by Beau, and yet my favorite thing to eat in the whole world is a Roast Chicken, LOL!
