Not exactly cookies but had a couple squares of white choc bark so melted them and spread on some pretzel sticks yesterday. Sprinkled them with red sprinkles before the bark hardened. Always a big hit.

Rum / bourbon balls

Ingredients

1 package (9 oz) thin chocolate wafer cookies, finely crushed (about 2 cups)
2 cups finely chopped almonds, pecans or walnuts
2 cups powdered sugar
1/4 cup unsweetened cocoa powder n
1/2 cup light rum/bourbon
1/4 cup light corn syrup
1/2 cup powdered sugar

In a large bowl, stir together the crushed vanilla wafers, 3/4 cup confectioners’ sugar, cocoa, and nuts. Blend in corn syrup and rum.
Shape into 1 inch balls, and roll in additional confectioners’ sugar. Store in an airtight container for several days to develop the flavor. Roll again in confectioners’ sugar before serving.

And now my favourite bar of all time. I used to make them many times a year while I lived in Canada, then stopped until hubby reminded me to start making them again. I could not find the original recipe I used, but this one comes close to what I remember. I love this Canadian food blogger’s recipes and photos.

Oh boy, great topic!

But first I was to digress to a prior topic - about instant pots. I haven’t got one yet because I know I won’t be able to part with the things it will replace and will end up with just one more appliance.

BUT my crockpot was totally inadequate for keeping mashed potatoes warm for Thanksgiving. My newer crockpot cooked the edges of the potatoes, which I should have anticipated, knowing it gets way too hot.

So - my question is does the instant pot have adjustable heat settings? Since it keeps warm as well as being a slow cooker, I would assume so. After my older crockpot dies, I might need to get one. I should have got one on Black Friday-a friend got a good deal on amazon then.
