Sometimes spelled baloney (as it is pronounced), Bologna has been one of the more popular luncheon meats for decades.
Favorite bologna sandwich garnishes are mustard, ketchup, mayonnaise, cheese, lettuce, pickles, tomato, and onion.
Bologna is derived from and is somewhat similar to the Italian mortadella (a finely hashed/ground port sausage) that originated in Bologna, Italy.
United States government regulations require American bologna to be finely ground and without visible pieces of lard.
Bologna can alternatively be made out of chicken, turkey, beef, pork, venison or soy protein.
Bologna Bowl When a slice of bologna is heated, the fat renders and the round slice takes the shape of a bowl which may be filled with cheese or other fillings.

Then there”s MSM bologna, which is toxic.

I say Catsup. That's how my family said it. We also called Bologna Baloney, but today, I call it Mortadella.
By the way, I have only eaten one meal in Bologna--in December, 1961--and it wasn't Baloney. It was green ravioli.

Oscar Mayer bologna is made with beef. Most cheap bologna is made from mechanically separated poultry, which I won’t touch.
Don’t get me started on chorizo.
My brother-in-law would take a bologna sandwich in his lunch to work EVERY DAY.
When I was a child, and we really had very little money, I envied the kids, who had bologna sandwiches. For us, it was either PB&J or one slice of cheese in between 2 pieces of bread with a bit of mayo and mustard.

I had a fried bologna, egg, and cheese sandwich for dinner the other night. lol
We have a meat market here where I buy a lot of meat. I’ll only eat chorizo from there. They make their own and darn there’s is good.
Johnsonville and Jimmy Dean make good commercial chorizo.

I don’t eat bologna anymore (turned vegetarian), but damn, I have good memories of fried bologna and apple sauce with breakfast or cut up bologna in scrambled eggs. I don’t think the veg bologna fries up as well; probably not enough fat.
That is one of my favorites :)
