Velveeta and Rotel. When all else fails....

With everything going on in the world and politics. North Korea, NFL issues, congressional faceplants, with all that, consider this:

we still have Velveeta and Rotel. plus a nice fresh bag of chips.

the world won't be any improved, but you will be....

You cannot beat it. I lived in NM for 14 years.

Went through Hatch ever week, most of that time.

Wonderful people there. Most farming communities are like that.

When I lived in Canada, we had some friends from Bermuda.
We had them over for dinner and my wife made cornbread and beans. The next day, she asked the other woman how they had liked the dinner. The woman said they liked it, “but,” she said sheepishly, “I’ve been farting all day!”

OK.

There are a lot of things that can be made with peppers.

I haven’t canned any in a long time. You have to be careful with that.

You’re a fortunate man. I grew up on both flat corn tortilla red chili enchiladas with a fried egg on top or the casserole type.

Red or green chili go well with many things. As you know, Lol.

So, an 8oz box of Velveeta. One can of Rotel. The whole 7oz can of chipotle pepper in adobo sauce?

Okay... I've been taking it slow to taste the incremental difference.

I've been using the Mexican Velveeta, which adds jalapenos and spices. I also chop up a fresh jalapeno to add to the Rotel, plus some chili powder and ground cumin.

I recently added a chipotle pepper, but not the whole can. That seemed to me to be too much. Maybe I should try one batch and go all in, just to see what the extreme tastes like? Maybe even puree the Rotel, jalapeno, and chipotle, in a food processor first (unless "chunky" is preferred)?

Wife has a pork roast in a batch of green chili made with fresh Hatch chilies simmering in the crock pot right now. Shed the pork in the chili and it is awesome on a burrito or just with a rolled up tort.

Add ground italian sausage and a can of cream of mushroom soup. Serve with jalapenos.

Usually popper recipes call for batters and dipping and frying.......not to mention the kitchen clean-up.

The no-sweat technique used for these poppers is extraordinary.....so you might as well use the extra time gifted you to stuff the little sonovaguns.
