Depends on how quick he "cleaned" it.
Sometime a "Boar" has a strong male scent throughout the meat, and is only good for dog food.

The meat is pretty gamey for most folks, but the hams are tolerable, smoked with a lot of apple and some clove.

I never found much use for the rest of it, though.

I wouldn’t. Boar meat smells and tastes funny when cooked because of the testosterone in it. Plus feral hogs have all sorts of parasites like pork tapeworms.

That depends on a lot of things; if it was healthy, what it was eating, whether it was stressed when it was shot, etc. That ol’ boy looks like he’s pretty healthy. Maybe eating suburban garbage? I would say it’s probably good, though tough. Lots of sausage and slow cooked BBQ.

The guys in my area of Texas normally do not butcher any wild pig over about 100#. It does mater what they have been eating.

Boars this large all tend to be tough and not very tasty. They have a “flavor” to them.

Cleaning quickly, soaking in ice water and or bining tend to improve flavor. Over 100# or so can be used in sausage, but require added domestic pork fat as wild pig are much leaner meat.
