Actually Las Vegas. When I go to Vegas, I always make a point to go to one of those for a breakfast scramble and then the In-And-Out for lunch.
Eggs FROM HEALTHY FREE ROAMING CHICKENS WITH ACCESS TO GOOD FOOD are probably the cheapest healthiest food on the planet. To be eaten in full, not just the yolk or just the white. Nature’s perfect food.
I get the butter, lemon very warm and throw that and the yolks in a food processer. Usually use pasteurized eggs. YUM!!!
If by, “American Ham” you mean country ham then we can be FRiends.
Well, I meant ham grown and processed in America. Regular old ham.

I never really liked Canadian ham, until I found a version at Costco that is almost like sliced baked ham.

Perfect Fried Eggs:
Put 1/2 tspn of bacon fat in a small non-stick pan. Heat on high.
When it starts smoking (~450 degrees), throw a pad of butter in the pan. It will burn.
Break two eggs into pan, cover, change heat to medium-high, cook for one minute.
Remove from heat, still covered, for one minute.
Slide onto plate & devour.
(Adjust times for how much you want the yoke done.)
When I read a new whatever where it says: “ Studies now show———”, and then it goes on to say that eggs, or butter, or some other forbidden food is good for you, I just want to scream. Where were these “scientists” when they first went off the edge saying how bad was butter, but oleo was healthy. Aarrgghhhh!
We have 5 lovely hens that deliver 3-5 eggs per day. The yokes are almost orange and the taste is fantabulous. In addition the chooks eat every insect and weed the yard. Win win.
A couple weeks ago, we made breakfast for the men’s group at church. One of the guys donated 3 dozen fresh from the farm duck eggs.
