Crack them into pan with a dab of sizzlin’ hot bacon grease [and/or butter] and put a clear skillet lid over them; they will cook from below but the lid helps make a little “oven” so they cook more evenly; it traps steam which cooks the membrane on the yolk until it turns cloudy, no flipping needed, and the edges won’t get too overdone, they’ll be just right.

Eggs have cholesterol. Eggs have lecithin. While too much cholesterol may not be good, lecithin cuts cholesterol, so eggs are a balanced food.

Eggs and seeds(nuts too) are the beginnings of life forms. Tons of good stuff.
They should though. It’s actually more than a garnish. It helps with the breath and the digestion.
I’m trying the Ketogenic diet right now. I’ve lost inches but not weight but I haven’t gained any either. It’s 80% fat, 20% protein, and just 5% carbs. The goal is to keep it under 20 g of carbs per day to put the body into ketosis so it burns fat instead of carbs. Carbs and protein turn to sugar for the body to burn as energy or it stores it as fat. Took about a week for my body to get used to this big change but I’m healthier, eating the foods I like without ever feeling hungry. I just wish I would have made this change before I gained an extra 30 lbs or so. There are plenty of veggies but very few fruits in this diet. Fruits are considered nature’s candy with all the natural sugar in it. Sweets have been my weakness in the past but that’s changing. Once I get to the weight I want to be I can increase my carb intake a little and even take a carb day once in a while and go for it but that won’t be for a while.
High/long endurance athletes are using this diet with great success because the body can only store so much carbs to use as fuel before it starts using muscle but even lean people have plenty of stored fat so at 2 hours of competing they still have plenty of fat energy to burn whereas the carb burner needs to refill his tank with more carbs or he runs out of first level fuel. Ketosis put the body into being a fat burner. It takes a couple of days for it to kick in after the carbs are mostly gone. Diabetics need to be careful; especial type 1. Everything is about blood sugar with diabetics. Lack of or too much or just right.
Oh, and they say a person can eat up to 36 eggs a day with no problems, not sure about that much but the message is; go for it!
Regarding margarine:
As an experiment, I baited 3 identical rat traps: One with peanut butter, one with regular butter, and one with margarine. They were all placed along the North side of my house out of the weather.
Peanut butter caught a rat every other day.
Regular butter caught a rat or two per week.
Margarine caught nothing over 3 months.
I even swapped the placement around and refreshed the bait, but the results were the same.
If rats won’t eat it, it’s not food.
*My* rat problems are pretty much over since I got a new cat...
Keto is great but if you are not losing weight you should change WHEN you eat.
Skip breakfast, eat between noon and seven PM.

I dropped 9 pounds since Easter on Keto then stalled out until I tried intermittent fasting. Dropped three more pounds in just the last few days.

Eggs are about as close to meat as you can get w/o being actual meat.

Micro Greens (sprouts), too. The seeds keep for a long time, and I learned a while back that you can even freeze sprouting seeds, so they’re great additions to ‘prepper’ plans.
Fake breakfast:
When the DC Chapter freeped outside the original Walter Reed on Georgia Avenue for seven years, many of us often went to the Tastee Diner in Silver Spring. It was moved off of GA Ave to Cameron Street (a couple of blocks north of Colesville Rd) some years ago due to a land grab by Discovery Communications, but it’s still the best diner around. We used to take many of the recovering soldiers up there. The waitstaff was wonderful to us.
I don’t get over Silver Spring way often, but I do like the Laurel one - especially their coffee. There’s just something about diner coffee; and there’s a very neighborhood feeling that you don’t find in a chain.
My husband has been working on his ham licenses, and he takes the tests up in Laurel. We’ve been stopping at the diner after the tests. It’s also not far from the Amish market (Dutch Country), and the huge thrift store up there.
